Paneer Kathi Roll

Directions

  1. 1Mix maida, salt, sugar, and baking powder in a bowl.
  2. 2Add milk and water to the dry ingredients.
  3. 3Knead into a soft dough, apply oil, cover, and let it rest.
  4. 4In a bowl, add curd, salt, turmeric, Kashmiri red chili powder, coriander powder, cumin powder, garam masala, and chaat masala for paneer marination.
  5. 5Mix well and add paneer cubes, kasuri methi, and mustard oil.
  6. 6Heat oil in a pan, add garlic, green chili, and sliced onions, then sauté.
  7. 7Add capsicum and tomato, and sauté for 1 minute on high flame.
  8. 8Add the marinated paneer and fry until there is no moisture.
  9. 9Finish off with coriander leaves.
  10. 10Take small balls of dough to prepare lachha paratha.
  11. 11Roll out into a slightly larger circle than roti.
  12. 12Apply oil and dust with maida, then fold inward to make thin folds.
  13. 13Stretch the folded dough as much as possible and roll it into a circular shape.
  14. 14Roll out to form a thin paratha.
  15. 15Place on a hot tawa and cook both sides halfway.
  16. 16Apply oil and cook both sides until golden brown.
  17. 17Apply green chutney to the paratha.
  18. 18Add paneer stuffing.
  19. 19Add tomato ketchup, sliced onion, and lemon juice.
  20. 20Sprinkle chaat masala.
  21. 21Fold the paratha over the filling to make a roll.
  22. 22Wrap the roll in paper and enjoy.
