Brown Butter Chocolate-Chip Cookies

Directions

  1. 1Heat butter in a saucepan on low heat until browned.
  2. 2Remove from stove and add to sugar and brown sugar.
  3. 3Whisk until it resembles wet sand then add egg and vanilla.
  4. 4Sift flour and baking soda in (add pinch of salt too if you want) then gently fold until combined.
  5. 5Add dark chocolate chunks.
  6. 6Scoop dough onto baking sheet, then chill for 30 minutes.
  7. 7Preheat oven to 175 degrees celcius, then bake for 12-13 minutes until edges are slightly browned.
  8. 8Sprinkle with flaky salt and enjoy warm.

  • 1 tbsp unsalted butter
  • 100 g sugar
  • 150 g brown sugar
  • 1 egg
  • vanilla paste or essence
  • 185 g all-purpose flour
  • 0.5 tsp baking soda
  • dark chocolate
  • flaky salt

Tips

  • Browning the butter means you cook the butter just until the milk solids become toasted.
  • The formula for any cookie is: fat + sugar + binding agent + leavening agent and flour.
