Heat butter in a saucepan on low heat until browned.

Remove from stove and add to sugar and brown sugar.

Whisk until it resembles wet sand then add egg and vanilla.

Sift flour and baking soda in (add pinch of salt too if you want) then gently fold until combined.

Add dark chocolate chunks.

Scoop dough onto baking sheet, then chill for 30 minutes.

Preheat oven to 175 degrees celcius, then bake for 12-13 minutes until edges are slightly browned.

Sprinkle with flaky salt and enjoy warm.

1 tbsp unsalted butter
100 g sugar
150 g brown sugar
1 egg
vanilla paste or essence
185 g all-purpose flour
0.5 tsp baking soda
dark chocolate

Tips
Browning the butter means you cook the butter just until the milk solids become toasted.
The formula for any cookie is: fat + sugar + binding agent + leavening agent and flour.
