1Finely chop your shrimp into a shrimp mince, dice your chives, and finely slice your red bell pepper.
2In a bowl, add your shrimp, white pepper, chives, cornstarch, red bell pepper, oyster sauce, minced garlic, and mix to make your filling.
3Wet a piece of rice paper with water and shake off any excess liquid.
4Place your wet rice paper on a flat surface, your filling in a long line from the top of the rice paper to the bottom, and fold over the rice paper encasing the filling and creating a long, thin log/burrito shape.
5Cut the rice paper log into bite sized pieces.
6In your air fryer, lightly spray your oil, place your shrimp pops on top, and coat with a quick spray of oil.
7Air fry at 375 degrees for 10 minutes, or until crispy and golden brown.
8In a small bowl, mix together chili crisp, soy sauce, water, and sesame seeds to make your dipping sauce.
9Once cooked, remove the shrimp pops and enjoy with your sauce!
