In a large bowl, whisk together the miso paste, brown sugar, sake, light soy sauce, oil, lime zest and juice, and sambal.

Add the chicken thighs and toss well to coat.

Marinate for at least 20 minutes, or up to overnight in the fridge for deeper flavor.

Lightly spray the air fryer basket with cooking spray.

Cook the chicken at the highest temperature setting for about 10 minutes, or until cooked through and nicely charred at the edges.

You will need to work in batches to cook them all without crowding the basket.

Heat a drizzle of oil in a medium pot over medium heat.

Reserve half of the minced ginger for the sauce.

Add the scallion whites and half of the ginger to the pot and sauté until fragrant, about 1 to 2 minutes.

Stir in the rice and toast briefly.

Add the water or stock and cook according to the package instructions for Lundberg Family Farms brown rice.

Place the reserved scallion greens and remaining ginger in a heatproof bowl.

Heat 1/3 cup oil in a small saucepan until it just begins to smoke.

Carefully pour the hot oil over the scallion greens and ginger.

Stir and let it bloom for a minute.

Season lightly with salt.

Serve the charred miso chili lime chicken over the herby brown rice and spoon the ginger scallion sauce generously over the top.

0.5 cup miso paste
3 tbsp brown sugar
3 tbsp Sake
3 tbsp light soy sauce
2 tbsp oil
1 lime
1 tbsp sambal, to your preference
Water as needed to thin
Cooking spray
2 cups Lundberg Organic Short Grain brown rice
6 large scallions, thinly sliced, whites & greens separated
2 inch knob of ginger, peeled & minced
4 cups water or stock
Oil as needed
Reserved scallion greens & Ginger
0.33 cup oil, heated until it just begins to smoke
