Miso Chili Lime Chicken with Herby Brown Rice

Directions

  1. 1In a large bowl, whisk together the miso paste, brown sugar, sake, light soy sauce, oil, lime zest and juice, and sambal.
  2. 2Add the chicken thighs and toss well to coat.
  3. 3Marinate for at least 20 minutes, or up to overnight in the fridge for deeper flavor.
  4. 4Lightly spray the air fryer basket with cooking spray.
  5. 5Cook the chicken at the highest temperature setting for about 10 minutes, or until cooked through and nicely charred at the edges.
  6. 6You will need to work in batches to cook them all without crowding the basket.
  7. 7Heat a drizzle of oil in a medium pot over medium heat.
  8. 8Reserve half of the minced ginger for the sauce.
  9. 9Add the scallion whites and half of the ginger to the pot and sauté until fragrant, about 1 to 2 minutes.
  10. 10Stir in the rice and toast briefly.
  11. 11Add the water or stock and cook according to the package instructions for Lundberg Family Farms brown rice.
  12. 12Place the reserved scallion greens and remaining ginger in a heatproof bowl.
  13. 13Heat 1/3 cup oil in a small saucepan until it just begins to smoke.
  14. 14Carefully pour the hot oil over the scallion greens and ginger.
  15. 15Stir and let it bloom for a minute.
  16. 16Season lightly with salt.
  17. 17Serve the charred miso chili lime chicken over the herby brown rice and spoon the ginger scallion sauce generously over the top.

  • 0.5 cup miso paste
  • 3 tbsp brown sugar
  • 3 tbsp Sake
  • 3 tbsp light soy sauce
  • 2 tbsp oil
  • 1 lime

  • Water as needed to thin

  • 4 cups water or stock
  • Oil as needed
  • Reserved scallion greens & Ginger
  • 0.33 cup oil, heated until it just begins to smoke
