Directions

  1. 1Mix all marinade ingredients until the brown sugar and miso are fully dissolved.
  2. 2Add baking soda to the sliced meat, then pour marinade over the beef.
  3. 3Marinate for 24 hours.
  4. 4Pat the beef dry.
  5. 5Place into your oven, pellet smoker, or offset smoker at 200°F for about 5 hours.
  6. 6Pan sear the meat for a crispy, caramelized finish if desired.

Tips

  • Thai chilies are used as a substitute for Hawaiian chili pepper.
  • The beef can be stored as is after smoking or pan seared Helena’s-style for a crispy edge.
  • Serve with rice and poi.
