  1. 1Cut potatoes into matchsticks.
  2. 2Pick a few cabbage leaves.
  3. 3Place the fries into a jar.
  4. 4Add two tablespoons of salt to the jar.
  5. 5Pour water into the jar, covering the fries.
  6. 6Cover the potatoes and water with cabbage leaves.
  7. 7Seal the jar.
  8. 8Leave the jar in a cool, dark place for seven days.
  9. 9Drain the water from the jar.
  10. 10Pat the fermented fries dry with paper towels.
  11. 11Fry the fries at 325°F for five minutes.
  12. 12Fry the fries at 400°F for another three minutes until golden brown and crispy.
  13. 13Eat the fries immediately with no additional seasoning.
