1Slice onions and add to your pot with some oil and butter.
2Caramelize the onions by letting them get nice and brown on the bottom, then deglaze with a little bit of water. Repeat until the onions are caramelized.
3Add pancetta to the pot and let it get nice and crispy.
4Add garlic to the pot and mix everything together.
5Deglaze with a touch of white wine.
6Add salt, a little bit of thyme, and fresh rosemary.
7Add dry pasta and beef broth to the pot.
8Once the pasta is nearly cooked, add heavy cream and Parmesan.
9Add a nice top layer of fresh Gruyère.
