Directions

  1. 1Shred Colby Jack, Cheddar, and Gouda cheeses.
  2. 2Melt butter in a pot.
  3. 3Add flour to the melted butter and whisk to make a roux, ensuring all flour cooks out.
  4. 4Add milk and heavy cream to the roux.
  5. 5Add half of the shredded Colby Jack, Cheddar, and Gouda cheese to the mixture and melt down.
  6. 6Add a little more milk to make it two cups total.
  7. 7Add the remaining cheese knobs that weren't shredded to the cheese sauce and melt.
  8. 8Season the cheese sauce with pepper and smoked paprika to bring back a smoky flavor.
  9. 9Boil elbow noodles according to package instructions.
  10. 10Season the boiled noodles with pepper and salt.
  11. 11Pour the melted cheese sauce over the seasoned elbow noodles.
  12. 12Mix the noodles and cheese sauce thoroughly.
  13. 13Pour half of the macaroni and cheese into a skillet.
  14. 14Top with half of the remaining Colby Jack, Cheddar, and Gouda cheese.
  15. 15Add the rest of the macaroni and cheese to the skillet and spread it out evenly.
  16. 16Add mozzarella cheese on top of the macaroni and cheese.
  17. 17Ensure every square inch of the pan is covered with cheese.
  18. 18Bake the macaroni and cheese at 375 degrees Fahrenheit for a couple of minutes.
