5Cut the potatoes into quarters and square them off.

9While the potatoes roast, whip up the chipotle ranch by combining sour cream, mayonnaise, diced chipotle pepper, garlic powder, onion powder, fresh dill, and sea salt in a mason jar and shaking well.
10Garnish with parsley and Parmesan.
