High-Protein Blueberry Muffins

Directions

  1. 1Preheat your oven to 400 degrees F.
  2. 2In a mixing bowl, combine 150 grams of oat flour, 1 egg, 1/2 cup of Fairlife skim milk, 1 teaspoon of olive oil, 50 grams of unsweetened applesauce, 150 grams of plain 0% Greek yogurt, and 50 grams of vanilla whey/casein protein blend.
  3. 3Add 2 teaspoons of baking powder, 1 tablespoon of cinnamon, 1/4 teaspoon of sea salt, and 20 grams of brown sugar substitute to the bowl.
  4. 4Mix all ingredients together until well combined.
  5. 5Fold in 170 grams of fresh blueberries.
  6. 6Spray a muffin tin with nonstick cooking spray.
  7. 7Spoon the batter into the prepared muffin tin.
  8. 8Bake at 400 degrees F for 20 to 40 minutes, or until golden brown.
