Crispy, Cheesy Beef Pockets

Directions

  1. 1Heat a skillet over medium heat and cook the diced onion and garlic until softened.
  2. 2Add the ground beef and cook until browned.
  3. 3Add the chili powder, cumin, garlic powder, paprika, onion powder, oregano, salt, and pepper.
  4. 4Mix together, then add the tomato paste and combine.
  5. 5Pour in the beef broth and let it simmer until the liquid cooks into the beef.
  6. 6Add the bell peppers and corn and mix everything together.
  7. 7Dip each tortilla in water, then cut them in half.
  8. 8In the center, layer mozzarella cheese, beef filling, and more mozzarella.
  9. 9Fold into a triangle.
  10. 10Mix the melted butter with garlic and parsley.
  11. 11Brush some of the garlic butter on the bottom of a circular baking dish, place the pockets seam-side down, then brush more butter over the tops.
  12. 12Bake at 400°F for 15–20 minutes or until golden.
  13. 13Switch the oven to low broil and cook for an additional 2–3 minutes to crisp the tops.

  • 1 tsp black pepper
  • 2 tbsp tomato paste
  • 0.5 cup beef broth
  • 0.5 cup red bell pepper, diced
  • 0.5 cup green bell pepper, diced
  • 0.5 cup corn
  • Burrito-size flour tortillas
  • Mozzarella cheese
  • 3 tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 tsp dried parsley

Tips

  • To assemble, start by dipping your tortillas in water.
  • Cut the tortilla in half, layer filling, fold, and place in a baking dish.
  • Brush with garlic butter and bake until golden and crispy.
