Peel the potatoes.

Cut the potatoes into approximately 1-inch bite-sized chunks.

Bring a large pot of salted water to a boil.

Add the baking soda and the potatoes to the boiling water.

Stir and boil uncovered for 10 minutes (or until a fork penetrates easily).

Drain the potatoes.
