Shredded Beef Enchiladas

Directions

  1. 1Open the chuck roast packaging with scissors and remove the chuck roast from the package.
  2. 2Pat the chuck roast dry with a paper towel.
  3. 3Coat the chuck roast in olive oil.
  4. 4Season the chuck roast generously on all sides with beef fajita seasoning.
  5. 5Get a large skillet going over medium-high heat with olive oil.
  6. 6Sear the chuck roast on all sides until a nice crust is built, then remove it from the pan.
  7. 7Add the diced onion and diced green chiles to the same pan.
  8. 8Mix to deglaze the pan with the moisture from the onions and chiles, and let them sauté for a few minutes.
  9. 9Add the red enchilada sauce and beef bone broth to the pan.
  10. 10Give everything a good mix.
  11. 11Place the chuck roast back into the pan.
  12. 12Bring the liquid to a low simmer, cover with a lid, and let it cook for 2.5 to 3.5 hours until it shreds apart easily.
  13. 13Shred the cooked beef using two forks.
  14. 14Add a thin layer of sauce to the bottom of an oven-safe dish.
  15. 15Take your tortillas, add shredded beef and cheese, then roll them up nice and tight.
  16. 16Place the rolled tortillas seam-side down into the oven-safe dish.
  17. 17Add the rest of the sauce over the top of the enchiladas.
  18. 18Sprinkle more shredded cheese over the sauce.
  19. 19Bake in the oven at 400°F (200°C) for about 20 minutes.
  20. 20Remove the enchiladas from the oven and let them cool for a few minutes.
  21. 21Plate the enchiladas and add your desired toppings such as low-fat sour cream, diced avocado, and fresh chopped cilantro.
