Mix 1 cup of water with ½ teaspoon of instant yeast and let it sit for five minutes.
In a bowl, combine 2 ½ cups of all-purpose flour, 2 teaspoons of sugar, and 1 ¼ teaspoons of fine sea salt. Whisk until combined.
Add the yeast mixture to the flour mixture and mix with your hands until a dough forms.
Transfer the dough to a lightly floured surface and knead until smooth.
Lightly grease a bowl with olive oil, shape the dough into a ball, place it in the bowl, cover it with plastic wrap, and let it rise at room temperature for 1-2 hours.
Meanwhile, blend 28 oz of Italian peeled tomatoes, 2 cloves of garlic, 2 teaspoons of olive oil, salt and a pinch of sugar until smooth.
Preheat pizza stone in the oven at 500°F for 45 minutes.
Dust a baking sheet generously with flour.
Turn the risen dough out onto the floured surface and divide it into two even pieces.
Shape each piece of dough into a ball, place them on the floured baking sheet, cover them, and let them rest for 30 minutes.
Dust a pizza peel generously with flour, place a dough ball on top, and gently press down to form a circle.
Spread pizza sauce, mozzarella cheese, and pepperoni on the pizza.
Bake the pizza for 5 minutes, then broil for 2 minutes. Finally, brush some garlic oil on the crust.
