1Cut off the root base of the enoki mushrooms, slice in half and tear into small clusters.
2Prepare Bowl 1 with the seasoned flour (flour, garlic powder, smoked paprika, black pepper, salt) and Bowl 2 with the batter (flour, water, and hot sauce, mixed until smooth but slightly thick).
3For each mushroom cluster, toss in seasoned flour, dip in batter, and return to the flour, pressing lightly for texture.
4Preheat the air fryer to 200°C and lightly spray the basket with oil.
5Place enoki clusters in a single layer, ensuring they are not overcrowded, and spray the tops with oil.
6Cook for 8–10 minutes, flipping halfway through, and spray again lightly if needed, until golden and crispy.
7Melt vegan butter in a pan, add minced garlic and cook for 30–60 seconds.
8Add maple syrup, soy sauce, and chilli flakes, then simmer for 1–2 minutes until glossy.
9Brush or toss the crispy mushrooms in the sauce before serving.
