Directions

  1. 1Place flour on the counter and create a well in the center.
  2. 2Add eggs and egg yolks into the well, scramble with a fork, and slowly incorporate the surrounding flour until a paste forms.
  3. 3Use a bench scraper to fold in the remaining flour, then knead the dough until uniform.
  4. 4Wrap the dough and let it rest on the counter.
  5. 5Dust dough and work surface with flour, then cut dough into four pieces.
  6. 6Roll out the dough, folding it into thirds and laminating repeatedly until desired thickness is reached.
  7. 7Cut the ends off the dough sheet, square it, and slice into noodles.
  8. 8Cook the pasta in boiling water.
  9. 9In a separate pan, melt butter with a splash of pasta water.
  10. 10Add pecorino, black pepper, and the cooked pasta to the pan, tossing to combine.
