Chop the unpeeled ginger into small pieces.

Add the water, ginger, and sugar to a clean glass jar. Stir vigorously to dissolve the sugar and introduce oxygen.

Cover loosely with a cloth or lid and keep at room temperature.

Every 24 hours, feed with 1 tbsp chopped ginger and 1 tbsp sugar. Stir well.

Repeat daily until you see bubbles, a slightly yeasty smell, and fizz when stirred — usually after 3–5 days.

1 tbsp unpeeled fresh ginger, chopped (must be organic!)
1 tbsp cane sugar

Tips
Do not peel the ginger, as the skin has wild yeasts.
Once active, store in the fridge and feed once a week.
You can use the ginger bug to make sodas in various flavors like ginger, black currants, red currants, cranberry, or green tea.
Sealing the soda in a bottle traps carbon dioxide for natural carbonation.
