Ginger Bug Starter

Directions

  1. 1Chop the unpeeled ginger into small pieces.
  2. 2Add the water, ginger, and sugar to a clean glass jar. Stir vigorously to dissolve the sugar and introduce oxygen.
  3. 3Cover loosely with a cloth or lid and keep at room temperature.
  4. 4Every 24 hours, feed with 1 tbsp chopped ginger and 1 tbsp sugar. Stir well.
  5. 5Repeat daily until you see bubbles, a slightly yeasty smell, and fizz when stirred — usually after 3–5 days.

Ingredients

  • 350 ml clean water
  • 1 tbsp unpeeled fresh ginger, chopped (must be organic!)
  • 1 tbsp cane sugar

Equipment

glass jarcloth or lidbottle

Tips

  • Do not peel the ginger, as the skin has wild yeasts.
  • Once active, store in the fridge and feed once a week.
  • You can use the ginger bug to make sodas in various flavors like ginger, black currants, red currants, cranberry, or green tea.
  • Sealing the soda in a bottle traps carbon dioxide for natural carbonation.
