In a bowl, combine 1 lb ground chicken, 1 egg, 1/4 cup breadcrumbs, 1/4 cup diced green onions, 2 cloves minced garlic, 1 tsp grated ginger, salt and pepper to taste, 1/2 tsp white pepper, 1 tsp cornstarch, and 1/4 tsp red pepper flakes (optional).
Using an ice cream scoop, form the chicken mixture into meatballs.
Sear the meatballs for 2-3 minutes per side on medium-high heat, then finish cooking in the oven.
For the honey garlic sauce, melt 1 tbsp butter in a pan. Add 4 cloves minced garlic, 1 tsp grated ginger, 2 tbsp honey, 1/4 cup soy sauce, and 1/4 cup water.
Add 2 tsp cornstarch slurry to thicken the sauce.
Add the cooked meatballs to the sauce and simmer for 5-6 minutes until fully cooked.
Serve the meatballs over rice, garnish with green onions and sesame seeds.
