Directions

  1. 1Peel and slice the onions thinly.
  2. 2Add olive oil and vegan butter to a large pot over medium heat.
  3. 3Add the sliced onions to the pot and sauté until caramelized.
  4. 4Pour in white wine and deglaze the pot.
  5. 5Add flour and stir to combine.
  6. 6Pour in vegetable broth.
  7. 7Add fresh thyme, salt, and pepper.
  8. 8Cover the pot and let it simmer.
  9. 9Serve the soup in a bowl, topped with toast and vegan cheese, then garnish with parsley.
