2Add 1 tablespoon of active dry yeast to the warm water.
3Add 1 tablespoon of brown sugar to the yeast mixture.
4Mix the yeast, water, and brown sugar together and set aside to bloom.
5Scald 1 cup of milk on the stove until it starts to steam and small bubbles appear around the edge, then remove from heat and let it cool to a lukewarm temperature.
6Cream together 1/2 cup of unsalted butter and 1 tablespoon of brown sugar in a mixing bowl until smooth and fluffy.
7Mix the cooled scalded milk into the butter and sugar mixture.
8Add the bloomed yeast mixture to the bowl and mix well.
9Add two lightly beaten eggs to the mixture and mix until combined.
10Sift in half of the 4 cups of flour and 1 teaspoon of salt, then mix until almost fully incorporated.
11Sift in the remaining flour and mix until the dough is fully combined.
12Mix the dough hard for about a minute or two to develop gluten, as it's too soft to knead.
13Place the dough in a pan with hot water to create a warm, humid environment.
14Cover the bowl with a tea towel or plastic wrap and let it rise until it doubles in size for about an hour.
15Once doubled in size, punch the dough down.
16Take equal portions of the dough (about 12 portions), stretch each piece, and push it up under itself to form a smooth top, pinching the bottom seams together.
17Place the shaped rolls on a lightly greased 9x13 inch baking pan.
18Brush some melted butter over the formed rolls.
19Cover the rolls with plastic wrap and a tea towel, then let them rest and rise again until doubled in size for about 30 minutes to an hour.
20After the second rise, brush a little more melted butter on top of the rolls.
21Bake the rolls at 400 degrees Fahrenheit for approximately 18-20 minutes until golden brown.
