Directions

  1. 1In a bowl, add diced potatoes, olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chilli powder, and smoked paprika. Mix well.
  2. 2Air fry or oven bake the potatoes at 200C/400F for 20-25 minutes (air fryer) or 30-35 minutes (oven), flipping halfway.
  3. 3While potatoes are baking, cook diced onions in a frying pan until they have the same color.
  4. 4Add extra lean beef mince to the pan with the onions.
  5. 5Add Worcestershire sauce and tomato paste and diced garlic. Mix and cook through.
  6. 6Once the mince is cooked, add to paste and diced garlic. Mix and cook through.
  7. 7In a bowl, add eggs and blended cottage cheese. Mix well.
  8. 8Cook the egg mixture on low-medium heat, mixing gently every minute or so until cooked perfectly.
  9. 9Warm a tortilla and evenly distribute the eggs, mince, and potatoes.
  10. 10Season the cooked eggs with salt and pepper.
  11. 11Top with sriracha mayo and chives.
  12. 12Roll, toast, and repeat for the remaining burritos.

  • 15 eggs
  • 100 g blended cottage cheese
  • 10 large tortillas
  • 25 g sriracha mayonnaise
