Preheat oven to 400 F (200C).

Slice the potatoes into thin slices.

Melt butter in a small saucepan over medium-high heat.

Add flour, and cook 2 minutes, stirring constantly with a whisk.

Gradually add milk, stirring with a whisk; cook over medium heat until slightly thick (about 3 minutes), stirring constantly.

Stir in the thyme.

Stir in the Gorgonzola; cook 3 minutes or until cheese melts, stirring constantly.

Stir in salt and pepper. Remove from heat.

Layer potatoes and the cheese sauce into your baking dish like you would layer a lasagna.

Cover and bake at 400F (200C) for 30 minutes.

Uncover and bake an additional 15-20 minutes or until potatoes are tender.

Remove from oven; let stand 10 minutes before serving.

Tips
Substitute Gruyere or for the blue cheese, if you like.
Use a mandoline or the slicing blade of a food processor to easily create uniformly thin potato slices.
To be on the safe side I recommend making a taste test after 40 minutes and bake it for a few more minutes when it’s not quite done yet.
The potatoes should still have a bit of a bite to them and not be mushy!
