Potato-Gorgonzola Gratin

Directions

  1. 1Preheat oven to 400 F (200C).
  2. 2Slice the potatoes into thin slices.
  3. 3Melt butter in a small saucepan over medium-high heat.
  4. 4Add flour, and cook 2 minutes, stirring constantly with a whisk.
  5. 5Gradually add milk, stirring with a whisk; cook over medium heat until slightly thick (about 3 minutes), stirring constantly.
  6. 6Stir in the thyme.
  7. 7Stir in the Gorgonzola; cook 3 minutes or until cheese melts, stirring constantly.
  8. 8Stir in salt and pepper. Remove from heat.
  9. 9Layer potatoes and the cheese sauce into your baking dish like you would layer a lasagna.
  10. 10Cover and bake at 400F (200C) for 30 minutes.
  11. 11Uncover and bake an additional 15-20 minutes or until potatoes are tender.
  12. 12Remove from oven; let stand 10 minutes before serving.

Tips

  • Substitute Gruyere or for the blue cheese, if you like.
  • Use a mandoline or the slicing blade of a food processor to easily create uniformly thin potato slices.
  • To be on the safe side I recommend making a taste test after 40 minutes and bake it for a few more minutes when it’s not quite done yet.
  • The potatoes should still have a bit of a bite to them and not be mushy!
