Add 1 and 1/4 cups of flour to a bowl.

Add 1/3 cup of cocoa powder to the bowl.

Add 1/4 teaspoon of baking soda.

Add 1/4 teaspoon of salt.

Combine all dry ingredients together using a whisk.

Melt 1/2 cup of butter in a separate bowl.

Add 1/3 cup of maple syrup to the melted butter.

Add 1 whole teaspoon of vanilla to the butter and maple syrup mixture.

Combine the wet ingredients (melted butter, maple syrup, vanilla) with the dry ingredients.

Mix until it turns into a dough.

Place the dough on parchment paper and freeze for 15 minutes.

Once chilled, flatten the dough.

Use a circle cutter to cut out small circles from the flattened dough.

Remove the remaining dough around the circles; this can be re-rolled and used for more cookies.

Transfer the parchment paper with the cookie circles onto a baking pan.

Bake the cookies at 325 degrees Fahrenheit for 12 minutes.

Let the baked cookies chill for at least 10 minutes.

For the cream filling, add 6 tablespoons of softened butter to a bowl.

Add 1 cup of powdered sugar.

Add 1 teaspoon of vanilla extract.

Mix the cream filling ingredients, optionally using your hands.

Add a dollop of the cream filling to the bottom side of a cookie.

Place another cookie on top of the cream filling and gently sandwich them together.

Tips
Use real vanilla, not synthetic.
