Heat coconut oil in a skillet.

Add chopped onions to the skillet and sauté.

Add diced tomatoes and scotch bonnet pepper to the skillet with the onions.

Add shredded saltfish to the vegetables.

Season with black pepper.

Stir the saltfish and vegetables together.

Add cooked ackee to the skillet.

Season with more black pepper.

Mix the ackee with the saltfish and vegetables.

Add chopped green onions to the mixture.

Stir the green onions into the ackee and saltfish mixture.

Transfer the fully cooled ackee and saltfish filling into a bowl.

Take one store-bought wonton wrapper.

Moisten the edges of the wonton wrapper with a tiny bit of water.

Place a spoonful of ackee and saltfish filling in the center of the wonton wrapper.

Fold two opposite ends of the wrapper towards the center over the filling.

Fold the other two opposite ends over to create a small envelope shape.

Repeat for all wonton wrappers until all filling is used.

Drop the filled wontons into very hot oil for a quick fry.

Use a slotted spoon to turn them and remove them from the oil once golden brown.

Place the fried wontons on a wire rack to drain excess oil.
