1Drizzle the chuck roast with a little olive oil then season with salt, pepper, and taco seasoning on each side. In a large pan over medium heat, sear on each side until there is a slight crust forming.
2Place the seared roast in your crockpot along with the diced onion, garlic, salsa verde, green chiles, bone broth, lime juice, and remainder of the taco seasoning pack. Stir to combine.
3Cover to cook on high.
4Once cooked, shred the beef using two forks and stir into the sauce in the crockpot.
5Serve warm over rice with your favorite toppings.
