Peel the potatoes and cut each potato into 16 french fries (cut three times horizontally and three times vertically).

Heat peanut oil to 275°F for the first fry.

Gently fry the potato pieces for approximately 5-6 minutes until they are cooked through but not broken.

Remove the fries and lay them gently on a drying rack to cool off for about 20 minutes, or refrigerate them until cold.

Heat the oil to 375°F for the second fry (aim for 375°F, though 380°F is acceptable).

Safely lay the cooled potatoes into the hot oil.

Fry for 4 minutes until they are golden brown and crispy.

Remove the fries and place them in a bowl.

Season generously with Dan-O's Cajun seasoning and toss to coat.

To make a dipping sauce, combine ketchup, a squeeze of sriracha, and Dan-O's Adobo seasoning.
