Directions

  1. 1Peel the potatoes and cut each potato into 16 french fries (cut three times horizontally and three times vertically).
  2. 2Heat peanut oil to 275°F for the first fry.
  3. 3Gently fry the potato pieces for approximately 5-6 minutes until they are cooked through but not broken.
  4. 4Remove the fries and lay them gently on a drying rack to cool off for about 20 minutes, or refrigerate them until cold.
  5. 5Heat the oil to 375°F for the second fry (aim for 375°F, though 380°F is acceptable).
  6. 6Safely lay the cooled potatoes into the hot oil.
  7. 7Fry for 4 minutes until they are golden brown and crispy.
  8. 8Remove the fries and place them in a bowl.
  9. 9Season generously with Dan-O's Cajun seasoning and toss to coat.
  10. 10To make a dipping sauce, combine ketchup, a squeeze of sriracha, and Dan-O's Adobo seasoning.
