Directions

  1. 1Make a dry rub by mixing brown sugar, salt, garlic powder, onion powder, smoked paprika, cayenne pepper, cajun seasoning, and cumin powder in a bowl.
  2. 2Cut the rack of baby back ribs in half.
  3. 3Remove the membrane from the back of the ribs using a knife or kitchen towel.
  4. 4Apply the dry rub all over the ribs, ensuring it gets into the bones and crevices.
  5. 5Wrap the ribs in aluminum foil and place them in an oven tray.
  6. 6Bake in a preheated oven at 140°C/285°F for 2.5 hours.
  7. 7Prepare the BBQ sauce by lightly toasting smoked paprika in a small saucepan for about 2 minutes.
  8. 8Add brown sugar, honey, balsamic vinegar, cherry vinegar, and a squeeze of orange juice to the saucepan.
  9. 9Stir in about 200ml of ketchup.
  10. 10Let the sauce simmer for about 15 minutes, or until it darkens.
  11. 11Remove the ribs from the oven, and brush the BBQ sauce onto both sides.
  12. 12Place the ribs back in the oven under the broiler on high heat for 2-3 minutes to char the sauce.
