Directions

  1. 1Pound cube steaks to 1/3-inch thickness, pat dry, and season with salt and pepper.
  2. 2Whisk together flour, salt, pepper, paprika, onion powder, garlic powder, baking soda, and baking powder in a shallow dish.
  3. 3In another dish, whisk buttermilk, hot sauce, and eggs.
  4. 4Dredge each steak in flour mixture, then buttermilk mixture, then flour mixture again, pressing to adhere. Place on a wire rack.
  5. 5Heat vegetable oil in a large cast iron skillet. Fry steaks in batches until golden brown (3-4 minutes per side). Drain and keep warm in a 200°F oven.
  6. 6Pour off oil, leaving 4 tablespoons. Whisk in flour and cook for 1-2 minutes. Gradually whisk in milk and cream; simmer until thickened. Season with salt and pepper.
