Drizzle oil all over the baking tray.

Sprinkle with salt, pepper, and fresh thyme.

Scatter with onion rings.

Lay the meatballs onto the tray, evenly spaced out.

Gently push the meatballs down to form a flat burger patty.

Add the cheddar cheese on top of each meatball patty.

Cut 6 rounds using a large pastry cutter.

Slather each with a tablespoon of onion jam leaving a small border around the outside.

Drape the pastry rounds, onion-jam side down onto the meatballs.

Using the back of a spoon or fork, press indentations around the edge of the pastry to seal.

Score the top in a diamond pattern with a sharp knife and then brush with egg.

Bake for 30–35 minutes, until the pastry is golden and crisp.

Remove from the oven and allow the tarts to sit on the tray for 5 minutes before flipping the burgers over.

Dress with pickles, mustard and ketchup or any burger relish you love.
