Cinnamon Roll Pancakes

tiktok.com
Serves 1

Directions

  1. 1Mix together wet ingredients: one egg, one and 1/4 cup of milk, and 1/4 cup of oil. Whisk until well combined.
  2. 2Add in flour, baking soda, and one tablespoon of sugar. Whisk until everything is combined and there's no more large clumps of flour. Don't overmix to avoid chewy pancakes.
  3. 3Set aside the pancake batter and prepare the cinnamon sugar filling: mix butter, cinnamon, sugar, and a tablespoon of batter.
  4. 4Put the cinnamon sugar mixture in a piping bag or ziplock bag and snip off the corner.
  5. 5Heat up a tablespoon of butter on a skillet on medium heat.
  6. 6Once the butter is melted and has started to bubble, scoop a large ladle of pancake batter and immediately cover the lid.
  7. 7Let the pancake cook for about 30 seconds. Once you start to see some small bubbles form on the pancake, swirl on the cinnamon sugar, cover the lid again, and let it cook for 4-5 minutes until the pancakes are done.
  8. 8Make sure to keep the heat on medium-low to medium to avoid burning.
  9. 9Top with icing and butter.
