Directions

  1. 1Combine flour, salt, a yeast water mixture, and some olive oil in a stand mixer or by hand until you have a smooth dough ball.
  2. 2Cover and let the dough rest for about 30 minutes.
  3. 3Divide the dough into 8 equal parts.
  4. 4Shape each part into a ball, then cover and let it rest for an additional 30 to 45 minutes.
  5. 5For the first topping, grind onions, bell peppers, and parsley in a food processor.
  6. 6Add the ground vegetables to some ground beef.
  7. 7Add a tomato red pepper paste, diced tomatoes, paprika, red pepper flakes, black pepper, and salt to the ground beef mixture.
  8. 8Mix all ingredients for the ground beef topping until well combined.
  9. 9For the second topping, grate mozzarella and Akkawi cheese.
  10. 10Roll out the rested dough pretty thin into long oval shapes.
  11. 11Add the ground beef topping to the rolled-out dough, spreading it evenly.
  12. 12Pinch the ends of the dough together, then fold over the remaining edges to form the pide shape.
  13. 13For another flavor, add the mozzarella and Akkawi cheese mix to the dough, topped with sujuk and shishito peppers, then fold the edges.
  14. 14For the last flavor, just do plain cheese by adding the cheese mix and folding the edges.
  15. 15Brush the edges of the pides with an egg wash.
  16. 16Top with sesame seeds and black seeds if desired.
  17. 17Bake the pides in a pan placed at the very bottom of a piping hot oven for about 8 to 12 minutes until beautifully golden.
  18. 18Brush the edges with butter after baking.
  19. 19Slice it up and enjoy.
