1Start by grating or blitzing the red onion and add to a bowl. Then finely chop the fresh parsley and mint and add to the same bowl.
2Add the egg, breadcrumbs, beef mince and seasoning to the bowl and mix until well combined.
3Take about a tablespoon of the mixture and flatten.
4Place a cube of the Kefalotyri in the middle, and roll the mince into a ball to cover.
5Smooth the edges using the palm of your hand to form a flat burger shape.
6Repeat this with the remaining mince meat.
7Over a high heat, add the olive oil to a frying pan.
8After 2 minutes, or until its heated up, carefully place the burgers. (You can test if the oil is hot by poking a wooden spoon in the oil and seeing if it fizzes up around it.)
9Cook for 3-4 minutes on both sides (a total of 7-8 minutes) until crispy and golden.
10Once cooked, place the burgers on a plate lined with kitchen roll to drain the excess oil.
