Sear the beef chuck roast in a Dutch oven.

Add butter, fresh rosemary, garlic, and a splash of red wine to the Dutch oven with the beef.

Add beef broth.

Cover the Dutch oven and slow roast the beef in the oven.

Bake the sourdough demi-baguettes in the oven.

Remove the baked demi-baguettes from the oven.

Slice the onion.

Add butter to a pan.

Add the sliced onions to the pan and caramelize them.

Deglaze the pan with white wine.

Remove the slow-roasted beef from the oven.

Shred the tender beef using forks.

Slice the demi-baguette lengthwise.

Remove some of the inside bread from the demi-baguette.

Drizzle olive oil inside the demi-baguette.

Tips
Remove a lot of the inside of the demi-baguettes to help them better hold the slow-cooked beef and cheese.
Toast the demi-baguettes with olive oil prior to adding the beef and cheese.
