Heat a little oil in a pan over medium heat.

Add the diced potatoes and onions to the hot oil.

Season the potatoes and onions with garlic salt and black pepper.

Mix and cook for 5 minutes, checking that the potatoes are done.

Add the rotisserie chicken, Roma tomatoes, and chicken bouillon.

Mix and cook for about 3 minutes.

Add the chicken broth or water and cilantro.

Set the filling aside to cool down.

For the salsa, add two Roma tomatoes, three tomatillos, two chile serrano or jalapeño, and one habanero to a small saucepan.

Cover with water, set over medium-high heat, and bring to a boil.

Transfer the boiled ingredients to a blender cup.

Add a very small piece of onion, two garlic cloves, salt, and a little bit of water to the blender cup.

Blend until smooth.

Dry the saucepan and heat a little oil.

Add the blended salsa to the hot oil.

Bring the salsa to a simmer.

Taste for salt and adjust if needed.

Reduce heat to medium-low and simmer for about 3 minutes.

Set the salsa aside until serving time.

Preheat tortillas using a comal or microwave.

Place a portion of the filling in the center of a tortilla, push it back, and tight roll it.

Secure with a toothpick and place in a Ziploc bag to keep warm.

Carefully place the flautas in hot oil and fry until golden.

Once one side is golden, remove the toothpick and flip to fry the other side.

Once golden on both sides, drain excess oil and place on paper towels.

Tips
Use a toothpick to secure the flautas and place them in a Ziploc bag to keep them warm while rolling the rest.
