Beef Patty

Directions

  1. 1Make your dough with butter, beef tallow, or a combination, using a food processor or grating very cold butter/tallow into dry ingredients.
  2. 2Add some vinegar and milk to bring the dough together and let it rest.
  3. 3Start the filling with onions, scallions, garlic, ginger, and scotch bonnet.
  4. 4Add ground beef and season it.
  5. 5Add ketchup for acidity and some soy sauce.
  6. 6Add some stock and let the filling simmer.
  7. 7Finish the filling with breadcrumbs to thicken and set aside until you are ready to construct your patty.
  8. 8Divide your dough into pieces and roll them out, or cut out circles to fill.
  9. 9Brush with egg wash before they go into the oven.
