Make your dough with butter, beef tallow, or a combination, using a food processor or grating very cold butter/tallow into dry ingredients.

Add some vinegar and milk to bring the dough together and let it rest.

Start the filling with onions, scallions, garlic, ginger, and scotch bonnet.

Add ground beef and season it.

Add ketchup for acidity and some soy sauce.

Add some stock and let the filling simmer.

Finish the filling with breadcrumbs to thicken and set aside until you are ready to construct your patty.

Divide your dough into pieces and roll them out, or cut out circles to fill.

Brush with egg wash before they go into the oven.
