Directions

  1. 1Season beef with salt and pepper.
  2. 2Sear the beef in a hot pot.
  3. 3Remove the seared beef from the pot.
  4. 4In the same pot, saute the onions, garlic, and tomatoes until soft.
  5. 5Add tomato paste and cook for 3-4 minutes.
  6. 6In a separate pan, add guajillo chili, ancho chili, bay leaves, cinnamon sticks, coriander seed, peppercorn, and cloves.
  7. 7Lightly toast the chilies and spices until fragrant.
  8. 8Add the toasted chilies and spices back into the pot with the beef and beef stock.
  9. 9Allow the mixture to simmer for 45 minutes or until the beef is tender.
  10. 10Remove the chilies and spices from the pot along with some of the liquid.
  11. 11Blend the removed chilies, spices, and liquid until smooth.
  12. 12Shred the cooked beef.
  13. 13Add the blended sauce, shredded beef, paprika, and cumin to the pot.
  14. 14Add oregano and mix well.
  15. 15Add cooked pasta to the pot.
  16. 16Add pasta water to the pot.
  17. 17Add butter to the pasta.
  18. 18Mix all ingredients thoroughly.
  19. 19Serve the Birria Pasta on a plate.
  20. 20Garnish with parmesan cheese, chopped red onions, and cilantro.

  • 2 -3 Sticks of cinnamon
  • 1 tbsp Coriander seed
  • 1 tbsp Peppercorn
  • 1 tbsp Cloves
  • 1 tbsp paprika
  • 1 tbsp cumin
  • 1 tbsp oregano
  • Pasta

  • Cilantro
  • Onions
  • butter
