French Onion Pot Roast

Directions

  1. 1Pat the chuck roast dry with a paper towel.
  2. 2Salt and pepper both sides of the chuck roast.
  3. 3Sear the chuck roast in a cast iron pan.
  4. 4In a mixing bowl, combine one sliced onion, one packet of beefy onion soup mix, two to three minced garlic cloves, and two cans of French onion soup.
  5. 5If desired, add some thyme to the mixture.
  6. 6Mix all the ingredients until beautifully combined.
  7. 7Pour half of the mixture into the bottom of the crock pot.
  8. 8Place the chuck roast into the crock pot.
  9. 9Add the rest of the mixture on top of the chuck roast.
  10. 10Add enough unsalted butter to your liking.
  11. 11Add the pan drippings from searing the chuck roast.
  12. 12Place the lid on the crock pot and set it to low for 8 to 10 hours.
  13. 13Once cooked, shred the meat.
  14. 14Serve the shredded meat and sauce over mashed potatoes.
  15. 15Sprinkle with parsley if desired for garnish.
