Pat the chuck roast dry with a paper towel.

Salt and pepper both sides of the chuck roast.

Sear the chuck roast in a cast iron pan.

In a mixing bowl, combine one sliced onion, one packet of beefy onion soup mix, two to three minced garlic cloves, and two cans of French onion soup.

If desired, add some thyme to the mixture.

Mix all the ingredients until beautifully combined.

Pour half of the mixture into the bottom of the crock pot.

Place the chuck roast into the crock pot.

Add the rest of the mixture on top of the chuck roast.

Add enough unsalted butter to your liking.

Add the pan drippings from searing the chuck roast.

Place the lid on the crock pot and set it to low for 8 to 10 hours.

Once cooked, shred the meat.

Serve the shredded meat and sauce over mashed potatoes.

Sprinkle with parsley if desired for garnish.
