Thanksgiving Mac and Cheese
Directions
- 1Start by preparing a seasoning blend with onion powder, garlic powder, cayenne pepper, and smoked paprika.
- 2In a large pot, melt the butter and toast the spices for a bit.
- 3Add an equal amount of flour to the melted butter and spices.
- 4Slowly whisk in the whole milk until a smooth béchamel is formed.
- 5Add more seasoning blend, salt, and pepper to taste.
- 6Stir in a spoonful of Dijon mustard.
- 7Turn off the heat, and add two slices of American cheese.
- 8Add the shredded cheese blend (cheddar, Gruyère, Gouda, and mozzarella) slowly.
- 9Add cooked pasta to the cheese sauce, mix well, and pour the mixture into an oven-safe dish.
- 10Top with another layer of shredded cheese blend.
- 11Bake at 350°F for 20 minutes, then broil for a couple of minutes.
- 12Garnish with chives and serve.

- 2 slices American cheese
- 2 cups Mild-Medium Cheddar cheese
- 1 cup Gruyère cheese
- 1 cup Gouda cheese
- 2 cups Mozzarella cheese
- 2 pounds pasta
- 1 to garnish chives
