Place one finely chopped onion into a bowl with a couple of tablespoons of water, cover with a plate, and microwave for 5 minutes.
While the onion is in the microwave, heat about a tablespoon of oil in a frying pan and add a packet of minced beef.
Break up the mince with your hand and fry until it is a nice golden brown.
Take the onions out of the microwave and add 2 teaspoons of garlic, 1 teaspoon of lazy ginger, 2 tablespoons of curry powder, 1 teaspoon of garam masala, 1 teaspoon of cumin, and half a teaspoon of turmeric.
Add a tablespoon of tomato puree to the onion and spices and stir everything together.
Add the onion and spice mixture to the browned mince and fry for about 2 minutes until fragrant.
After 2 minutes, add a can of chopped tomatoes, fill the can with water and add that too, and add two crumbled beef stock cubes.
Return the pan to the heat and simmer for about 20 minutes.
While the curry simmers, chop a can of potatoes into smaller pieces and put them into the bowl that held the spices.
Add about a tablespoon of oil to the potatoes and toss them to coat with the oil and any remaining spices.
Put your air fryer on its highest setting and pour in the potatoes, spreading them out, and cook until crispy.
After 20 minutes of simmering, add approximately 100 grams of frozen peas and the air-fried potatoes to the curry.
Stir and simmer for about 5 more minutes until the potatoes take on the flavor and the peas have defrosted.
Mix some Greek yogurt with a couple of teaspoons of mint sauce to serve alongside the keema.
Serve the keema curry, optionally with a coriander soda bread with garlic butter and coriander on top, instead of naan bread.
