Add 2 chicken breasts, 1/2 tsp salt, 1/2 tsp garlic powder, and 1/2 tsp onion powder into a food processor.
Blend the chicken and seasonings until well combined and finely chopped.
Take the chicken mixture and form it into patties with a nice round shape, oiling your hands to prevent sticking.
Prepare the breadcrumbs by blending 1/2 cup corn flakes cereal, 1 tbsp parmesan cheese, and 1/2 tsp each of salt, pepper, paprika, garlic powder, and onion powder.
Cover the chicken patties thoroughly in the blended breadcrumbs.
Place the breaded patties on a baking sheet lined with parchment paper and spray or brush with 1/2 tsp of oil.
Bake the patties at 450°F for 10 minutes (or air fry at 400°F for 8 minutes).
Prepare the sauce by mixing 2 tbsp light mayo, 1 tsp mustard, and 1/4 tsp onion powder in a bowl.
Add a cooked chicken patty to the bottom half of a burger bun.
Top the chicken patty with chopped lettuce.
Spread the prepared sauce on the top half of the burger bun.
Place the top bun with sauce onto the sandwich to complete it.
