Directions

  1. 1In a bowl, add diced potatoes, olive oil, salt, Italian herbs seasoning, onion powder, garlic powder, chilli powder, and smoked paprika. Mix it together.
  2. 2Air fry or oven bake the potatoes at 200C/400F for 20-25 minutes (air fryer) or 30-35 minutes (oven), flipping halfway.
  3. 3While potatoes are baking, cook diced onions in a pan until they have some color.
  4. 4Add extra lean beef mince to the pan with the onions.
  5. 5Add Worcestershire sauce and the same seasonings used for the potatoes.
  6. 6Once the mince is nearly cooked, add tomato paste and diced garlic. Mix and cook through.
  7. 7In a bowl, add eggs and blended cottage cheese. Mix together and cook on low-medium heat, mixing gently every minute or so.
  8. 8Season the cooked eggs with salt and pepper.
  9. 9Grab a warmed tortilla, evenly distribute the eggs, mince, and potatoes.
  10. 10Top with Sriracha mayonnaise and chives.
  11. 11Roll, toast, and repeat for other burritos.

  • 80 g tomato paste
  • 4 diced garlic cloves
  • 15 eggs
  • 100 g blended cottage cheese
  • 10 large tortillas
  • 25 g Sriracha mayonnaise
