Combine half a cup of milk and two teaspoons of apple cider vinegar. Let it sit for about 5 minutes until it curdles.
Sift together 1 1/4 cups of flour, 1/4 teaspoon of salt, 1 tablespoon of cocoa powder, and 1/2 teaspoon of baking soda.
In a stand mixer, add 1/4 cup of softened butter and 1/2 cup of sugar and beat vigorously.
Add one large egg at room temperature and mix using a spatula to get everything from the sides and bottom of the bowl.
Drizzle in 3 oz of oil slowly, then add the milk and vinegar mixture along with 1 teaspoon of vanilla extract.
Add the dry ingredients in two segments to avoid overworking the batter.
Add 1 tablespoon of red food coloring and mix until fully incorporated.
Grease two 6 inch cake pans with oil and add a piece of parchment paper at the bottom.
Divide the batter evenly between the prepared cake pans and bake at 350F for 17-19 minutes.
Once the cakes have cooled, level them with a serrated knife.
For the cream cheese frosting, mix 8 oz of softened cream cheese, 8 tablespoons of softened butter, 2 cups of powdered sugar, 4 tablespoons of heavy cream, 2 teaspoons of vanilla extract, and 1/2 teaspoon of salt.
Add a good amount of frosting to the first layer, then stack the second cake layer on top and frost the entire cake.
