Boil a pot of water.

Add 1 pound of rigatoni pasta to the boiling water.

Once pasta is done, pull out about a cup of pasta water.

Put a little bit of oil over the pasta and toss it around.

Set the pasta aside.

Add about half a dozen diced slices of thick-sliced bacon to the pot.

Once the bacon is crispy, pull it out and put it on a paper towel-lined plate.

Keep about 3 tablespoons of bacon fat in the pot.

Add garlic to the pot with the bacon fat.

Add about 3 tablespoons of flour.

Mix the flour around until there's no raw white flour visible.

Slowly whisk in 3 cups of milk, a little bit at a time.

Let it simmer for a couple of minutes until it starts to thicken up.

Add ranch seasoning mix to the pot.

Add 1 cup of shredded Monterey Jack cheese.

Add 2 ounces of cream cheese.

Stir until the cheese is melted and thick.

Put the pasta back into the pot.

Return the pot to the heat for a second.

Mix the pasta around and heat it up again.

Add the extra pasta water a little at a time until the desired consistency is reached.

Add a couple of cups of shredded rotisserie chicken.

Cut the heat and add the crispy bacon.

Add parsley as a garnish.
