HEALTHY CHICKEN AND RICE POWERBOWL

Directions

  1. 1Add 1.5lb skin-on bone-in thighs to a bowl.
  2. 2Drizzle with 1 tsp olive oil.
  3. 3Season with salt & pepper, 1.5 tbsp garlic powder, 1 tbsp smoked paprika, 1 tbsp thyme or oregano, 1/4 tsp cayenne pepper.
  4. 4Add 1 tbsp baking powder to make the skin crispy.
  5. 5Mix well.
  6. 6Pop into the oven at 400F for 40 mins.
  7. 7Process 1/2 cup Greek yogurt, 2 tbsp mayo, 2 scallions, 2 large handful fresh cilantro, 1/2 jalapeño (seeds removed if preferred), juice of 1.5 limes, 1/2 tsp chipotle powder & couple pinches salt to make the sauce.
  8. 8Taste & adjust the sauce.
  9. 9Make a light salad with 4 thinly sliced Persian cucumbers, 3 tbsp finely diced red onion, 2 tbsp finely chopped cilantro.
  10. 10Drizzle the salad with 1 tsp olive oil, the juice of half a small lemon, & a pinch of salt.
  11. 11Mix, taste, and adjust the salad.
  12. 12Cook the Kaizen lowcarb rice according to directions, or use your preferred rice.
  13. 13Put a serving of Kaizen protein rice at the base.
  14. 14Add a chicken.
  15. 15Add two large spoonfuls of the salad.
  16. 16Add 2 avocado slices.
  17. 17Drizzle some sauce over the assembled bowl.

  • 1 box Kaizen lowcarb rice
