Blackberry Chocolate Cake
Directions
- 1Beat egg whites until stiff peaks form.
- 2Add egg yolks and sugar, continue beating.
- 3Sift in cocoa powder, flour and baking powder, mix well.
- 4Pour batter into a prepared baking pan and spread evenly.
- 5Cook blackberries with sugar until softened.
- 6In a bowl, beat cream cheese with sugar until smooth and creamy.
- 7Bake the chocolate cake until done.
- 8Spread cream cheese mixture over the cooled cake layer.
- 9Top with blackberry mixture.
- 10Place another cake layer on top, spread the remaining cream cheese mixture.
- 11Melt chocolate and mix with peanuts.
- 12Pour chocolate and peanuts mixture over the cake and spread evenly.
