Hot Honey Chicken Bowls

Directions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Heat avocado oil in a skillet over medium heat. Cook chicken breasts for 5-7 minutes per side until golden brown and cooked through.
  3. 3Combine honey, sriracha, garlic, salt, pepper, cayenne, and crushed red pepper in a bowl; set aside 2 tablespoons of sauce.
  4. 4Add sliced zucchini and summer squash to the skillet, placing chicken on top. Pour hot honey sauce over chicken and vegetables.
  5. 5Transfer skillet to oven and bake for 20 minutes, or until chicken is fully cooked; stir vegetables halfway through.
  6. 6Let cool for 5 minutes. Cut chicken into cubes and toss in remaining sauce.
  7. 7Divide cooked rice among bowls. Top with zucchini, summer squash, carrots, avocado, and chicken.
  8. 8Squeeze lime juice and drizzle with ranch dressing, if desired.
