Peel the sweet onions.

Slice the onions thinly on a mandoline, about a quarter of an inch thick.

Toss the sliced onions together in a bowl to break up all the rings.

Combine salt, black pepper, smoked paprika, granulated garlic, dry mustard, brown sugar, cayenne pepper, and fresh thyme leaves in a small bowl.

Mix the spices together with a fork.

Add olive oil to the sliced onions and toss to coat.

Sprinkle about half of the spice mixture over the onions and toss with your hands to distribute.

Sprinkle the remaining half of the spice mixture over the onions and toss again.

Grease a 13x9 baking dish.

Place a layer of seasoned onions on the bottom of the baking dish.

Sprinkle 2 ounces of freshly grated Tillamook mild cheddar cheese over the onion layer.

Sprinkle 2 ounces of freshly grated Gruyere cheese over the onion layer.

Add another layer of seasoned onions on top of the cheeses.

Sprinkle another 2 ounces of Tillamook cheddar cheese over the second onion layer.

Sprinkle the remaining 2 ounces of Gruyere cheese over the second onion layer.

Sprinkle about a half cup of freshly grated Pecorino Romano cheese on top.

Dot the top with 3 tablespoons of butter, cut into small pieces.

Tightly cover the baking dish with foil.

Bake in the oven at 350 degrees Fahrenheit for 45 minutes.

Remove the foil and bake for another 30 minutes until golden brown and bubbly.

Tips
It is important to slice the onions uniformly and thinly (about 1/4 inch thick) so that they melt and are silky, not crunchy.
You can use either light or dark brown sugar.
You can use sharp cheddar cheese if you prefer.
You can use Parmesan Reggiano or Grana Padano instead of Pecorino Romano cheese.
