Tennessee Onion Casserole

Directions

  1. 1Peel the sweet onions.
  2. 2Slice the onions thinly on a mandoline, about a quarter of an inch thick.
  3. 3Toss the sliced onions together in a bowl to break up all the rings.
  4. 4Combine salt, black pepper, smoked paprika, granulated garlic, dry mustard, brown sugar, cayenne pepper, and fresh thyme leaves in a small bowl.
  5. 5Mix the spices together with a fork.
  6. 6Add olive oil to the sliced onions and toss to coat.
  7. 7Sprinkle about half of the spice mixture over the onions and toss with your hands to distribute.
  8. 8Sprinkle the remaining half of the spice mixture over the onions and toss again.
  9. 9Grease a 13x9 baking dish.
  10. 10Place a layer of seasoned onions on the bottom of the baking dish.
  11. 11Sprinkle 2 ounces of freshly grated Tillamook mild cheddar cheese over the onion layer.
  12. 12Sprinkle 2 ounces of freshly grated Gruyere cheese over the onion layer.
  13. 13Add another layer of seasoned onions on top of the cheeses.
  14. 14Sprinkle another 2 ounces of Tillamook cheddar cheese over the second onion layer.
  15. 15Sprinkle the remaining 2 ounces of Gruyere cheese over the second onion layer.
  16. 16Sprinkle about a half cup of freshly grated Pecorino Romano cheese on top.
  17. 17Dot the top with 3 tablespoons of butter, cut into small pieces.
  18. 18Tightly cover the baking dish with foil.
  19. 19Bake in the oven at 350 degrees Fahrenheit for 45 minutes.
  20. 20Remove the foil and bake for another 30 minutes until golden brown and bubbly.
