One-Pot Chicken Gnocchi Soup

Directions

  1. 1Season chicken breast generously with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil. If you can still see chicken, add more seasoning.
  2. 2Finely dice a large shallot.
  3. 3Crush and roughly chop some garlic.
  4. 4In a heavy bottom pot over medium-high heat, add a generous amount of olive oil.
  5. 5Carefully lay in your seasoned chicken breast.
  6. 6Once the chicken is fully cooked, remove it and either chop or shred it.
  7. 7Add a little more olive oil to the pot.
  8. 8Add the garlic and shallots to the pot.
  9. 9Squeeze in a little bit of tomato paste.
  10. 10Add in some sun-dried tomatoes.
  11. 11After a few minutes, add a whole lot of chicken stock.
  12. 12After about 15 minutes, add in your heavy cream.
  13. 13Grate in a good amount of Parmigiano-Reggiano cheese.
  14. 14Let it simmer to thicken up.
  15. 15After about 20 minutes, salt to taste.
  16. 16Add in cold butter.
  17. 17Add your cooked chicken.
  18. 18Add gnocchi.
  19. 19Add a handful of spinach.
  20. 20Cover and let it cook for 5 minutes.

Tips

  • If your pot isn't big enough, don't overcrowd it; just cook the chicken in a couple of batches.
