Easy, Healthier Philly Cheesesteak Pasta

Directions

  1. 1Add salt to boiling water.
  2. 2Add 1 & 1/4 cup pasta to the boiling water.
  3. 3Cook the pasta for 7 minutes.
  4. 4Save 1/2 cup pasta water.
  5. 5Drain the pasta and set it aside.
  6. 6Heat olive oil in a pan.
  7. 7Add 1 chopped onion to the pan.
  8. 8Add 1 chopped green pepper to the pan.
  9. 9Add 1 cup sliced mushrooms to the pan.
  10. 10Add 1 tbsp minced garlic to the pan.
  11. 11Cook the vegetables until soft.
  12. 12Make space in the center of the pan.
  13. 13Add 1 cup lean ground beef or sirloin to the center of the pan.
  14. 14Season the beef with salt, pepper, paprika, and chili powder.
  15. 15Cook the beef until brown.
  16. 16Add 1/4 cup light cream cheese.
  17. 17Add 1/3 cup fat free Greek yogurt, plain.
  18. 18Add 1/3 cup light mozzarella cheese.
  19. 19Add 1/2 cup pasta water.
  20. 20Mix well.
  21. 21Add the cooked pasta to the pan.
  22. 22Mix well to combine all ingredients.

  • 0.5 cup pasta water

Tips

  • For more traditional flavor, feel free to add provolone cheese, but in moderation due to calories!
