Directions

  1. 1Season the chuck roast on all sides with salt, pepper, garlic powder, and onion powder.
  2. 2Heat olive oil in a skillet over medium-high heat.
  3. 3Sear the roast on all sides until deeply browned.
  4. 4Place potatoes, carrots, onion, and garlic in the bottom of the slow cooker.
  5. 5Set the seared roast on top of the vegetables.
  6. 6In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary.
  7. 7Pour the mixture over the roast and vegetables.
  8. 8Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the meat is fork-tender.
  9. 9Garnish with fresh parsley before serving if desired.
